Description
Flour, seawater and a professional oven: a pizza cooking class in Milan lets you make a pizza from start to finish in the venue of Origine, with pizzaioli beside you. You begin by hearing about the place's approach: respect for the ingredients, seawater used instead of salt, and traditional methods combined with new ideas.
Then come the hands. You work the flour and seawater into a dough, learn to knead by hand and to manage the rising, and are shown what makes it soft, elastic and easy to digest. Next you stretch the dough into a disc, control its thickness and learn how to keep it from sticking, before adding the toppings in a balanced way.
The last step is the oven. You see how a professional oven works, where to place the pizza and how long it needs, and then you sit down with the other participants to taste what you made.
